Overview

We will learn how to make Matcha Dango with Japanese Confectionery Designer Midori Nishimura!

We will start with the basic recipe of dango, then we will make two different types of Kawaii Dango decoration redesigned specifically for the occasion by Nishimura sensei. At the end, we will make a tasty drink that goes perfectly with Dango.

Use your ability and your creativity to give shape to original wagashi, the traditional Japanese sweets.
Everything you need is just a few typical Japanese ingredients and your curiosity!

Dango is basically made in two flavors: matcha green and rice flour dumpling white.
We will decorate our skewered dango in two different versions:
- Traditional mitarashi (soy glaze)
- Matcha butter cream
If you have difficulty to find the ingredients for the second type, you can make a third version instead:
- Black honey roasted soybean flour
④ How to Make Matcha Latte
At the end, she will show you how to make matcha latte, the perfect drink to match with Japanese Sweets.
Matcha is a type of powdered green tea that, besides Tea Ceremony (sadō), is largely used as ingredient in both Japanese and Western confectionery.

Basic Ingredients

① Top grade rice flour 30g
② Refined rice flour 70g
③ Tofu 95g
④ Matcha powder 1g

Traditional mitarashi (soy glaze) recipe

① Soy sauce 1 tablespoon
② Sugar 2 tablespoon
③ Potato starch 1 teaspoon
④ Water 65ml

Matcha butter cream recipe

① Butter 30g
② Sugar 45g
③ Matcha powder 1g

Black honey roasted soybean flour recipe
(If you cannot make matcha butter cream)

① Brown sugar 25g
② White granulated sugar 25g
③ Roasted soybean flour (kinako) 10g
④ Hot water 50ml

Toppings

① Nuts (walnuts, pistachio, almond, etc.)
② Fruits (pineapple, blueberry, raspberry, etc.)

Matcha latte recipe
① Matcha powder 1 teaspoon
② Hot water 60ml
③ Sugar 2 teaspoon
④ Milk 250ml
